Easy family meatloaf

55 to 70 minutes baking, plus prep and 10 minutes resting · Serves about 8 (estimated)

Base recipe: 8 servings (estimated).

Ingredient quantities adjust below. Cooking times and pan sizes do not change automatically. Quantities mentioned in the directions refer to the original recipe. For baking, keep the original pan size and make extra batches. For part of an egg, beat it first and measure the portion needed.

Ingredients

  • ½ medium onion, diced very finely for kids
  • 1 teaspoon butter
  • 2 eggs
  • ¾ cup milk
  • ¾ cup Italian or seasoned breadcrumbs
  • 2 pounds lean ground beef
  • 1 tablespoon ketchup or chili sauce
  • 1 teaspoon Italian seasoning
  • 2 tablespoons chopped fresh parsley or 2 teaspoons dried parsley
  • 1 teaspoon kosher salt, more to taste
  • ½ teaspoon black pepper

Meatloaf sauce

  • ½ cup Heinz Chili Sauce (not spicy)
  • ½ cup ketchup
  • 2 tablespoons brown sugar, optional

How to make it

  1. Preheat the oven to 350°F. Line a rimmed baking pan with aluminum foil and coat with cooking spray.
  2. Cook the finely diced onion in butter over medium-low heat until tender. Let it cool completely.
  3. Combine the eggs, milk, and breadcrumbs in a bowl. Let stand for 5 to 10 minutes.
  4. Add the ground beef, cooled onion, 1 tablespoon ketchup or chili sauce, Italian seasoning, parsley, salt, and pepper. Mix just until combined.
  5. Shape into one 8 × 4-inch loaf on the prepared pan. Bake for 40 minutes.
  6. Mix the sauce ingredients while the meatloaf bakes. Spread the sauce over the loaf, then bake for another 15 to 30 minutes, until a food thermometer in the center reads 160°F. If desired, broil for 1 to 2 minutes, watching closely.
  7. Let the meatloaf rest for 10 minutes before slicing and serving.

Make it your own

Dice the onion really small for kids and soften it before mixing. The brown sugar in the glaze is optional.
