Ingredients

  • 2 cups (260 g) whole wheat flour
  • ⅔ cup rolled oats
  • 1 teaspoon cinnamon
  • ¾ teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1⅓ cups unsweetened applesauce
  • 2 eggs
  • ⅓ cup melted coconut oil
  • ⅓ cup maple syrup
  • ⅓ cup milk
  • 1 teaspoon vanilla
  • ¾ cup raisins

How to make it

  1. Heat oven to 425°F. Grease a 12-cup muffin tin or its paper liners.
  2. Mix flour, oats, cinnamon, baking soda, baking powder, and salt. Separately whisk applesauce, eggs, oil, syrup, milk, and vanilla. Fold wet into dry with raisins, stopping when flour disappears.
  3. Divide among cups, filling to the top. Bake 5 minutes; leave muffins inside and reduce oven to 350°F. Bake 15 to 16 minutes more, until a toothpick comes out clean.
  4. Cool in the pan 5 minutes, then transfer to a rack.
