Creamy tomato & spinach pasta

Ingredients

  • 8 oz penne
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 can (14.5 oz) diced tomatoes, with juice
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ⅛ teaspoon red pepper flakes
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons tomato paste
  • ½ cup water
  • 2 oz cream cheese
  • ¼ cup grated Parmesan
  • 4 oz fresh spinach

How to make it

  1. Boil penne until tender according to its package; drain.
  2. Meanwhile, soften onion and garlic in oil over medium heat, 3 to 5 minutes. Stir in tomatoes, herbs, pepper flakes, salt, pepper, paste, and water.
  3. Reduce heat. Stir in cream cheese until smooth, then Parmesan. Fold in spinach until wilted, about 2 to 3 minutes. Toss with pasta.
