This is a family favorite that was my son's go-to birthday meal. It's rich and a great way to get kids to eat broccoli. The recipe came from our Nana and it's been a staple in our household ever since. For a lighter flavor, replace the mayonnaise with non-fat yogurt or sour cream.

Curried chicken & broccoli casserole

- Cooking spray
- 1 bunch broccoli, chopped
- 2 cans (10.5 oz each) condensed cream of chicken soup
- 1 cup mayonnaise
- ¼ cup lemon juice
- 1 teaspoon curry powder
- Salt and black pepper
- 3 lb cooked rotisserie chicken, meat removed and chopped
- 1 cup grated cheddar
- 1 cup crushed cornflakes
- ¼ cup slivered almonds, optional
How to make it
- Heat oven to 350°F. Grease a 9 × 13-inch dish.
- Microwave broccoli, covered, with 2 tablespoons water for 2 to 3 minutes.
- Whisk soup, mayonnaise, lemon, curry, salt, and pepper. Layer broccoli, chicken, then sauce in the dish. Add cheddar, cornflakes, and optional almonds.
- Bake uncovered about 30 minutes, until bubbling and golden; check the center reaches 165°F.
