Ingredients
- 2 garlic cloves, minced
- 1 teaspoon grated ginger
- 1 carrot, diced
- 1 red bell pepper, diced
- 4 green onions, sliced, whites and greens separated
- 2 eggs, beaten
- 1 cup frozen peas
- 3 tablespoons cooking oil, divided
- 3 cups cooked, refrigerated rice
- 3 tablespoons soy sauce
- 1 tablespoon toasted sesame oil
How to make it
- In a large skillet over medium heat, scramble eggs in 2 tablespoons oil until set. Transfer to a plate.
- Increase heat to medium-high. Cook carrot for 2 minutes, then pepper and onion whites for 1 minute. Add peas; heat through and transfer vegetables to the plate.
- Add remaining oil, garlic, ginger, and rice. Stir-fry until thoroughly hot, about 2 minutes. Add soy sauce and sesame oil; return eggs and vegetables and heat through. Finish with onion greens.
